Pickled Pink Onions

They are so simple to make, once you have the liquid you can keep adding more red onions, or shallots to the pot and get a good few goes with it. You can use bottle lime juice if you are in a rush or haven’t got access to fresh limes its not as good but it works and I do always have high quality lime juice in as a back up.

Ingredients: 

Makes 1 × 500ml jar

  • 2 medium red onions, peeled and very thinly sliced

  • 180ml fresh lime juice (around 6–8 limes), or bottled lime juice

  • 2 tbsp unrefined caster sugar or maple syrup

  • 1 tsp fine sea salt

    Method:

    Squeeze the lime juice directly into a clean 500ml Kilner jar, then add the sugar and salt. Give it a good stir, until the sugar has dissolved. Thinly slice the red onions and add them to the jar, pressing them down gently into the pickling liquid so they're completely submerged. If needed, add a little more lime juice to cover them. Leave them to pickle for at least 30 minutes, although they're even better after a few hours or overnight in the fridge where they will turn a beautiful vibrant pink. They'll keep happily in the fridge for up to two weeks.
